The typical South Tyrolean speck dumplings are prepared following a recipe with precise ingredients. The quality of the speck is also crucial to give that particular taste that distinguishes them.

Preparation

For the speck dumplings, put cubes of white bread in a bowl and pour some milk over them. Heat the oil and fry the thinly sliced speck and diced onion in it, then add them to the bread. Add eggs, chives and a little salt and mix everything well. Let the dough rest for about 30 minutes. Form the dumplings and cook in salted water for 10 minutes.

  • 350 g of dry white bread, cut into cubes
  • 250 g of milk
  • 100 g of sunflower oil
  • 150 g of speck, cut into cubes
  • 1 onion, diced
  • 2 eggs from free-range hens
  • 3 tablespoons of chives, finely chopped
  • Salt
